Angie makes some healthy, gluten free banana pancakes with very little ingredients on the Cuisanart Griddler. Recipe below. We really like the Cuisanart Griddler. We use it in both the home and the RV. It’s not very big, but opens up for a decent size griddle. The plates are reversible with grill grates on the other side. You can also purchase waffle plates. We cook everything on it. From steaks, chicken, burgers, pork chops, breakfast, etc…. It is also a great sandwich maker/panini press.

The blue bowl used to mix the ingredients is collapsible and comes in a set of 3 different sizes. They collapse and store easily in the RV. They also have lids! Link to buy them below!


RECIPE:
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 6 mini pancakes

Ingredients:

  • 1 banana
  • 2 eggs

Directions:

1. Using a fork, mash the banana in a bowl.
2. Mix 2 eggs into the mashed banana and whisk together.
3. Pour the batter into a lightly oiled pan. You can make the pancakes as big as you’d like; however, the smaller the pancake, the easier it is to flip.
4. Add your favorite toppings! Maybe some chocolate for that sweet tooth (my go to), some strawberries to pair with the banana or you can stick to the classic syrup option.

These pancakes were delicious! With the sweetness of the banana, you really don’t have to add anything else.
